Leftover Turkey Enchiladas

Wondering what to do with all those turkey leftovers? Make yummy winter enchiladas!

-Leftover Turkey (cubed)
-1 can Black Beans
-1 Sweet Potato (cubed)
-1 Red Pepper (diced)
-1/2 Onion (diced)
-1 Clove Garlic (diced)
-Cilantro to taste
-Cumin to taste
-Garlic Salt to taste
-Enchilada Sauce
-Corn Tortillas
Saute onions in olive oil in a cast iron skillet, add peppers & garlic, saute about 5 minutes then add sweet potato and all spices. Saute until potato is somewhat soft. Remove from heat and pour contents into a glass bowl along with beans.

Preheat oven to 350 degrees. Using the same skillet, warm up the enchilada sauce and let tortillas get soft in sauce. Remove one at a time, spoon mixture onto tortilla an roll. Line up in a baking dish. When finished cover with foil and bake for approx. 45 mins.

Acorn squash stuffed w/ quinoa

4 acorn squash (cut tops off & scoop out seeds)
1/2 onion (chopped)
Walnuts (chopped)
1 cup quinoa (rinsed)
1/4 cup dried cranberries
Olive oil
10 Mushrooms (chopped)
Parsley (chopped)
1 clove garlic (chopped)

Heat oven to 375 degrees. Place squash into covered baking dish. Add a little olive oil inside the squash. Bake for approx. 45 mins.

Rinse quinoa and add 2 cups of water to a pot, bring to a boil, reduce, cover and simmer.

Place walnuts in hot pan and continue to stir until toasted. Don't let them burn. Sauté onions in olive oil. Add mushrooms and garlic. Cook until very fragrant.

When quinoa is done add remaining ingredients to pot and mix. Take squash out of the oven add butter or natural balance to the inside and stuff with quinoa mixture. Serve.

Sweet Potato Curry


WOW! This crockpot creation was Delicious and Easy! Perfect for a day when you are short on time and need your dinner to cook itself.

2-4 sweet potatoes (peeled & chopped)
1/2 onion (chopped)
1/2 red pepper (chopped)
1/2 green pepper (chopped)
6 stalks of celery (chopped)
Handful of cashews
1 can of coconut milk
Curry powder (to taste)
Turmeric (to taste)
Himalayan Pink Salt & Pepper (to taste)
Garlic Salt (to taste)

Place all veggies in a cast iron skillet with some olive oil and saute for about 3 minutes. Add spices and saute for about 5 more minutes.

Then dump into a crock pot and add coconut milk. Let simmer until warm and eat whenever you are ready.

Butternut squash, mushroom, walnut, sage pasta

This was Amazing! Although I forgot to take a picture :( but, trust me, you won't be disappointed.

1/2 butternut squash
Brown rice or quinoa pasta
Crimini mushrooms (sliced)
Onions
Walnuts (chopped)
Fresh sage (chopped fine)

Preheat oven to 400 degrees. Cut a butternut squash in half. Peel the skin off. Now cut into small cubes. Place into a baking dish and coat with olive oil. Roast for about 30 mins or until tender.

While that is roasting, boil your noodles and chop your veggies. In a cast iron skillet add a little olive oil and carmelize your onions. When they are just about ready, add your mushrooms. Cook until desired consistency.

Check noodles, do not overcook or they will get mushy. Rinse in warm water (they are really starchy). Place back in pot and add the butternut squash & mushroom mixture. Add the walnuts, sage and pecorino cheese. Stir & serve.

Vegetarians and meat eaters will both enjoy this hearty, healthy, delicious dish!

Perfect Foods Bar

I love this bar! I eat them when I don't have time for breakfast or when I need a snack. They have other flavors, but I eat the almond because of the nutritional value:) You can buy these at Whole Foods and Earthbound Farms in Carmel Valley (which I am lucky enough to pass by every morning :)

Flax - A "Superfood"

Besides being the best source of omega 3's, flax oil is a good source of omega 6, or linoleic acid (LA). Sunflower, safflower, and sesame oil are greater sources of omega 6 fatty acids but they don't contain any omega-3 fatty acids. Flax oil is 45 to 60 percent the omega-3 fatty acid alphalinolenic acid (ALA).



In addition to nutritious fats, flax seeds contain other nutrients which make eating the whole seed superior to consuming just the extracted oil:
  • Flax seeds contain a high quality protein.
  • Flax seeds are rich in soluble fiber. The combination of the oil and the fiber makes flaxseeds an ideal laxative.
  • Flax seeds contain vitamins B-1, B-2, C, E, and carotene. These seeds also contain iron, zinc, and trace amounts of potassium, magnesium, phosphorus, calcium, and vitamin E and carotene, two nutrients which aid the metabolism of the oil.
  • Flax seeds contain over a hundred times more of a phytonutrient, known as lignin, than any of its closest competitors, such as wheat bran, buckwheat, rye, millet, oats, and soybeans. Lignins have received a lot of attention lately because of possible anti-cancer properties, especially in relation to breast and colon cancer. Lignins seem to flush excess estrogen out of the body, thereby reducing the incidence of estrogen-linked cancers, such as breast cancer. Besides anti-tumor properties, lignins also seem to have antibacterial, antifungal, and antiviral properties.

The health benefits of almonds include getting relief from constipation, respiratory disorders, cough, hearth disorders, anemia, impotency, and diabetes. It also helps in hair care, skin care (psoriasis), and dental care.

Found in places like Iran, Saudi Arabia, Lebanon, Turkey, Syria, Jordan and Israel, almond is a very nutritious nut. It is a rich source of vitamin E, calcium, phosphorous, iron and magnesium. It also contains zinc, selenium, copper and niacin. Almonds contain the most nutrients in comparison to all other nuts.

Both sweet and bitter almonds are available. Usually, sweet almonds are edible and bitter almonds are used to make almond oil, which is used to add flavor to food. Almonds are usually eaten raw, but people also add them as ingredients in salads. Almond milk is a delicious drink.

You can eat almonds directly, preferably eat it empty stomach to ensure absorption of their nutrients. You can soak them in water overnight and eat in the morning. You can also garnish various dishes with crushed almonds.

Coconut milk creamer



Love this creamer! You can buy it at Whole Foods.

Bread-less Veggie Fritata

My hubby made this for me :) xoxox



6 eggs (beaten)
Peppers (diced)
Onions (diced)
Mushrooms (diced)
Spinach
Sweet potatoes (cubed)
Zucchini (diced)
Garlic (diced)
Chicken apple sausage (optional)
Cheese of choice (optional or goat cheddar)
Cast iron skillet

Sauté onions in skillet w/ a little butter, add the sweet potatoes (cook about 5mins) add remaining veggies, garlic & sausage, mushrooms last. Cook to desired texture. Add egg mixture and stir. Remove from burner. Add raw spinach to top, add cheese and place into 400 deg oven 10-15 min.

Let cool 5 mins & serve!

Yummy!



Butternut Squash, Arugula Salad


Salad
-1/2 butternut squash
-2 bags of arugula
-pomegranate seeds
-Dried Cranberries
-grated pecarino cheese
-toasted walnuts

Dressing
-apple cider vinegar
-olive oil
-fresh chopped sage
-Dijon
-salt & pepper

Half, peel, cube & roast a butternut squash with olive oil. (400 deg, 45 mins, let cool)

Toss together with salad ingredients & dressing.

Yummy!!!!
