Salad in a Jar


I got this idea from Pinterest! Sooo Cool!!! They did it in Mason Jars, but this was all I had. Use or make your favorite dressing and pour into bottem of jar. Next add carrots, mushrooms, cucumbers, califlower, broccolli, cherry tomotoes (things that wont get too soggy). Next I added pecans and apples. Finally I added greens. Make sure the greens do not touch the dressing until ready to eat. When ready to eat just shake and eat. {Remember Mc Donalds Salad Shakers?}



EASY BALSALMIC:
  • 1/4 cup balsalmic vinegar
  • 1/8 cup olive oil
  • 1 tablespoon digon mustard
  • pinch sea salt
  • pinch pepper
Pour all ingredients into a blender and blend for a few seconds.

Mini Frittatas


Ingredients

- Any Sauteed Veggies
- Chicken Apple Sausage
- Raw Spinach
- Raw Broccoli
- 6-8 Eggs
- Almond Milk
- Goat Cheddar

Spray mini-muffin tin with non-stick spray, add veggies, sausage or whatever you want. Mix eggs with 1/4 cup Almond milk and pour into muffin tins. Sprinkle cheese (optional) on top and bake for approx. 25 mins.

"Sugar Free" Spiced Pecans


- 2 cups raw pecans
- 1 egg white
- 2 tablespoons agave nectar
- 2 teaspoons chili powder
- 1 teaspoon ground cinnamon
- 1 teaspoon celtic sea salt
- ¼ teaspoon cayenne

In a large bowl lightly whisk egg white, then briefly whisk in agave
Toss the pecans into the egg white mixture and stir to coat evenly
Toss in chili, cinnamon, cayenne and salt, stir so that pecans are evenly coated
Place pecans to a parchment paper lined baking sheet
Bake at 300° for about 25 minutes, until the pecans are browned and the coating is dry
Cool for 20 minutes

Jovial Guten Free Pasta

This new gluten-free pasta rocks!!!! Tastes just like regular pasta! The packaging is graphically pleasing and the shape of the caserecce was unique and delicious. Leftover Turkey Enchiladas

Wondering what to do with all those turkey leftovers? Make yummy winter enchiladas!

-Leftover Turkey (cubed)
-1 can Black Beans
-1 Sweet Potato (cubed)
-1 Red Pepper (diced)
-1/2 Onion (diced)
-1 Clove Garlic (diced)
-Cilantro to taste
-Cumin to taste
-Garlic Salt to taste
-Enchilada Sauce
-Corn Tortillas
Saute onions in olive oil in a cast iron skillet, add peppers & garlic, saute about 5 minutes then add sweet potato and all spices. Saute until potato is somewhat soft. Remove from heat and pour contents into a glass bowl along with beans.

Preheat oven to 350 degrees. Using the same skillet, warm up the enchilada sauce and let tortillas get soft in sauce. Remove one at a time, spoon mixture onto tortilla an roll. Line up in a baking dish. When finished cover with foil and bake for approx. 45 mins.
